Red Hill Estate Single Vineyard Pinot Noir draws from select blocks of the winery's Merricks Grove Vineyard, situated on the south-eastern hills of the Mornington Peninsula.
The grapes are hand harvested and gently crushed into open fermenters. They are fermented for around a week on skins with hand plunging every eight hours.
Once fermentation is complete, the wine is pressed and racked to French oak barrels. Following 18 months of maturation, the best parcels are selected for the final blend. The wine sees no filtration at bottling.
Crimson purple, Red Hill Estate Single Vineyard Pinot Noir has plush fruit layers and earthy flavours, mingled with silky tannins. Cellaring potential is 10 years.
